Day 49: Veggie Pita

When I was with my previous husband him and I tried the vegetarian living. He was in it longer but while it lasted for me I came up with this little sandwich. Years have gone and this still is one of my favorite thing to eat for lunch. What’s in it?

In the pita bread (this one is whole wheat) I put:

  • hummus
  • sprouts
  • tofu (I like to saute it first with olive oil)
  • avocado
  • green onions

LOVE LOVE LOVE it! Very easy and very healthy too.

    Wow, I’ll try it next week! I’ve been looking for ideas for wraps to have for lunch.
    Trying to be good, i’ve been having salad for lunch at work, and I’m afraid I might get bored soon.
